Second, you gotta caramelize the onions! Yes that’s right. No more big chunks of raw or partially cooked onions hanging off the sides. We are making something unique and beautiful here. The flavor of roasting or caramelization of any food truly releases the sugars but better than this, it creates a depth of flavor and complexity of taste that is second to none. The tender soft onion now is perfectly blended with the entire meatball offering this beautiful sweet and rustic flavor throughout the entire mouthwatering experience.
Third and last of today’s secrets, is the deep fry! So, no bake, or the pan fry, or the sauce cook. I mean the deep fry. So you take a large pan and put an inch and a half or two inches of good quality olive oil or peanut oil and you pipe the oil up to 375 and when ready the meatballs gets a hot oil bath. Now I may be a bit bias here but using Vito and Joe’s Extra Virgin Italian Olive Oil is a great way to go. This too will offer up a caramelized on the exterior of the meatball, but more than this, it preserves the interior moisture with all of its flavors. At the same time, frying offers you a distinct texture on the outside that will marry beautifully with the soft tender interior and exterior crunch.
Now of course there are so many other pointers and tips, like bread crumbs, eggs, adding some grilled pancetta, as well as the cheeses and so much more, but hitting the three above is a great start to setting a new standard of deliciousness in your kitchen.
